Morning Splendour: The Rainbow Smoothie Bowl

Ingredients:

1 cup mixed berries (strawberries, blueberries, raspberries)
1 banana
1/2 cup Greek yoghurt or 1/2 cup coconut yoghurt (vegan alternative)
A splash of almond or coconut milk
Toppings: Chia seeds, sliced almonds, fresh mint

Instructions:

Blend the berries, banana, yoghurt, and almond milk until smooth.
Pour into a bowl and garnish with a sprinkle of chia seeds, sliced almonds, and a sprig of fresh mint. Serve immediately and watch your child delve into a bowl of morning freshness!

Lunchtime Fiesta: Veggie-Loaded Quesadillas

Ingredients:

Whole wheat tortillas
1 cup mixed bell peppers, thinly sliced
1/2 cup sweet corn
1/2 cup black beans, rinsed and drained
1 cup shredded cheddar cheese or vegan cheese (vegan alternative)
A dollop of Greek yoghurt or for vegans: a dollop of non-dairy yoghurt or avocado mash

Instructions:

Lay out the tortillas and sprinkle a generous layer of cheese on one half.
Add a mix of bell peppers, sweet corn, and black beans on top of the cheese.
Fold the tortillas and grill on a hot non-stick pan until the cheese is melted and the tortillas are crispy.
Cut into wedges and serve with a dollop of Greek yoghurt or avo mash for dipping.

Dinner Delight: Baked Herb Chicken with Steamed Veggies

Ingredients:

4 chicken breasts or thighs
1 tbsp olive oil
1 tsp mixed herbs (thyme, rosemary, oregano)
Salt and pepper to taste
Mixed veggies (carrots, broccoli, peas)

Instructions:

Preheat your oven to 200°C (400°F).
Rub the chicken with olive oil, mixed herbs, salt, and pepper.
Place the chicken on a baking tray and bake for 25-30 minutes or until fully cooked.
In the meantime, steam the mixed veggies until they are tender yet crisp.
Serve the baked chicken with a side of steamed veggies for a balanced and wholesome dinner.

Vegan Dinner Delight: Stuffed Bell Peppers (Replacing Baked Herb Chicken)

Ingredients:

4 bell peppers, halved and deseeded
1 cup quinoa or couscous, cooked
1 can chickpeas, rinsed and drained
1 cup diced tomatoes
1 tsp mixed herbs (thyme, rosemary, oregano)
Salt and pepper to taste
Mixed veggies (carrots, broccoli, peas)

Instructions:

Preheat your oven to 200°C (400°F).
In a bowl, mix the cooked quinoa or couscous with chickpeas, diced tomatoes, mixed herbs, salt, and pepper.
Stuff the bell pepper halves with the quinoa mixture and place on a baking tray.
Bake for 20-25 minutes or until the peppers are tender.
Serve with a side of steamed mixed veggies for a wholesome and nutritious vegetarian dinner.
